Let’s be real, feeding a family every day can feel like a full-time job. I started this Daily Dish series because I wanted a space to share what we’re actually eating, in real life. No styled photoshoots, no overly aspirational meal plans, just the honest breakfasts, lunches, and dinners I’m throwing together to keep us fed and (mostly) happy! Some dishes are quick, some are a little chaotic, and some end up being surprisingly good. I hope it’s helpful, or at least a little relatable.

Egg and Bacon Breakfast Sandwich with Sriracha Mayo

This was one of those things that came together thanks to whatever we had leftover in the fridge. I was already cooking up some fluffy scrambled eggs for the girls (in a stainless steel pan…my new obsession), had some batch cooked turkey bacon and leftover garlicy Sriracha mayo from an asian dinner the other night. Threw it all together and it realllllly worked. This was on repeat for me all week!

What We Used

  • Toasted English muffin (I used these Ezekiel 4:9 ones for extra fiber!)
  • Turkey bacon
  • 1 egg made to your liking
  • Slice of cheese (I used sharp white cheddar)
  • Dollop of garlicy Sriracha mayo (I mix mayo, Sriracha and garlic powder together and keep in a jar in the fridge)

Shortcut Chicken and Waffles

Sweet, salty, crunchy…so satisfying! This was my husband’s creation on his Breakfast for Dinner night and now I am going to need him to make it weekly. Even the girls loved it!

What We Used

  • Kodiak Power Cake Buttermilk Flapjack & Waffle Mix (can use any waffle mix or even frozen waffles!)
  • Just Bare Lightly Breaded Chicken Breast Bites (or any breaded, frozen chicken)
    • We LOVE these! They are just crispy enough to be satisfying, but more chicken than breading.
  • Topping of maple syrup

Fish Tacos

We have had a Costco sized bag of frozen cod in our freezer taking up a lot of room, so I searched the internet on ways to use it. We settled on Skinny Taste Healthy Cod Fish Tacos! They were pretty good and hit the spot. I think next time I would bake the fish vs. try to blacken it on the stove top though. Less dishes and less mess!

I loved the light slaw mix on top and used it later in the week with some shredded chicken for revamped leftovers!

Peanut Butter Egg & Banana Pancakes

You’ve probably seen the super simple two-ingredient idea floating around of just mashed banana and eggs whisked together and cooked like pancakes. That’s what I did here for a quick kid breakfast, BUT I added some peanut butter, flour and a pinch of baking soda to make them fluffy. A mix between a traditional pancake and the simple two ingredient recipe.

What We Used

  • 2 eggs
  • 1 mashed banana
  • 1 tablespoon of peanut butter
  • About a tablespoon of flour
  • About a teaspoon of baking soda

Mix together and fry up little mini pancakes in a buttered skillet! These were great to store in the fridge for an easy grab and go breakfast.
