These Vegetarian Campfire Nachos are perfect for any camping trip. Easily customizable, super filling, and something everyone will love.
Welcome to the first of hopefully many camping recipes! We recently took our first family camping trip in our new rooftop tent and I could not wait to try these Vegetarian Campfire Nachos.

We didn’t pack anything to wash dishes with, so we tried to keep dinner at simple as possible. We are also self-proclaimed Nacho Connoisseurs so these seemed fitting for our first dinner!
Vegetarian Campfire Nachos
With a few swaps, we easily brought all the fixings of nachos to the fire.
Before we got the nachos going, I opened a can of Hormel Vegetarian Chili and put it over the fire to heat up. When we were ready for dinner, I sprayed the aluminum pan with cooking spray and loaded on the chips, cheese, and some pre-diced onions and peppers. Coving with foil and placed on the grate over the campfire for about 10-15 minutes or until the cheese was melted.
Once the chili was bubbling in the can, I poured it into a bowl and mixed in about a tablespoon of taco seasoning. Once the cheese was melted on the nachos, I poured on the seasoned chili and a little more cheese, covered with tin foil, and put it back on the fire.
After a few minutes more of cooking, I took them off the fire and topped with bagged shredded lettuce and a serious shortcut…grocery store taco dip! This was a great way to slim down the amount of topping to bring like sour cream, salsa, and olives.
The result was a super filling and hearty dinner! This could easily feed 3 or 4 people, so for just the 2 of us, we could barely finish it.
Topping Ideas
The beauty of nachos is you can put whatever your heart desires onto them! We kept it simple with just lettuce and some pre-made taco dip. This was great because we didn’t have to bring 3 more containers for sour cream, salsa, and olives. Some other great toppings would be:
- Individual guacamole or salsa containers
- Small 4oz can of black olives
- Jared jalapenos
- Avocados

Vegetarian Campfire Nachos
Equipment
- Disposable Aluminum Pan
- Tin Foil
- Cooking Spray
Ingredients
- 3/4 bag tortilla chips can use as much or little as you would like
- 2 cups shredded Mexican Blend or Colby Jack cheese
- 1/2 red pepper diced
- 1/2 white onion diced
- 1 can Hormel Vegetarian Chili or a can of black/pinto beans
- 1 tbsp taco seasoning
- 1 container pre-made taco or 7-layer dip typically found in grocery stores
- 1 cup shredded lettuce bagged or freshly chopped
Instructions
- Get your fire going with good flames.
- Meanwhile, open the can of chili/beans and let them heat on the grate over the fire.
- Prepare the aluminum pan by spraying cooking spray on the bottom and edges.
- Spread out the tortilla chips along the bottom of the pan.
- Sprinkle on the cheese, pepper & onions to cover the chips.
- Cover with tin foil and place over the fire on a metal grate and cook for about 10-15 minutes, or until the cheese is melted.
- Meanwhile, take the can of chili/beans and mix it in a bowl with the taco seasoning.
- Once the cheese has melted on the chips, remove it from the fire and top with seasoned chili/beans and additional cheese.
- Replace tin foil and place over the fire again until cheese is melted, about another 5 minutes.
- Remove from fire and top with any additional topping such as the taco/7-layer dip and lettuce!
