Vegetarian Campfire Nachos

Ingredients
3/4
bag
tortilla chips
can use as much or little as you would like
2
cups
shredded Mexican Blend or Colby Jack cheese
1/2
red pepper
diced
1/2
white onion
diced
1
can
Hormel Vegetarian Chili
or a can of black/pinto beans
1
tbsp
taco seasoning
1
container
pre-made taco or 7-layer dip
typically found in grocery stores
1
cup
shredded lettuce
bagged or freshly chopped
Instructions
Get your fire going with good flames.
Meanwhile, open the can of chili/beans and let them heat on the grate over the fire.
Prepare the aluminum pan by spraying cooking spray on the bottom and edges.
Spread out the tortilla chips along the bottom of the pan.
Sprinkle on the cheese, pepper & onions to cover the chips.
Cover with tin foil and place over the fire on a metal grate and cook for about 10-15 minutes, or until the cheese is melted.
Meanwhile, take the can of chili/beans and mix it in a bowl with the taco seasoning.
Once the cheese has melted on the chips, remove it from the fire and top with seasoned chili/beans and additional cheese.
Replace tin foil and place over the fire again until cheese is melted, about another 5 minutes.
Remove from fire and top with any additional topping such as the taco/7-layer dip and lettuce!
Notes
This recipe is easily customizable to include all your favorite nacho topping such as avocado, jalapenos, olives, etc!
